Yema Cheese Loaf

Procedure:

 

  1. Place all ingredients in the mixer
  2. Mix dough until fully developed.
  3. Scale dough into 450 grams portions.
  4. Flatten the dough into a triangle shape, approximately 10×8 inches.
  5. Place 50 grams yema icing and 50 grams grated cheese on the top.
  6. Roll the dough.
  7. Place into 9 x 5 x 3 greased loaf pan.
  8. Proof for 212 hours or until desired height is reached. Proof box temperature 31-33°C.
  9. Relative humidity 80-85%.
  10. Bake at 160°C for 25 minutes or until light brown.

Toppings:

  1. Brush with Yema filing on the top.
  2. Put grated cheese.

Makes 4 pieces at 450 grams.
