Yema Cake


  1. Combine and sift together cake flour and baking powder.
  2. Add sugar, blend well and set aside.
  3. In a separate bowl, combine oil, water and egg yolk and mix until well blended.
  4. Add the flour mixture and mix until smooth. Set aside.
  5. Beat egg whites then add cream of tartar and sugar gradually. Beat until soft peak is formed.
  6. Slowly fold in the batter mixture into the meringue. Do not over mix.
  7. Pour the batter in a 12×16-inch rectangular pan.
  8. Bake in a preheated oven at 175°C for about 25-30 minutes or until done.
  9. Let it cool. Frost cake with yema icing.

Yema Icing:

  1. Combine egg yolk, condensed milk and evaporated milk in a double boiler.
  2. Cook until thick and smooth.
  3. Add butter and blend well.

Yield: 1 piece 12×16-inch cake
