1. In a frying pan, cook tocino according to package directions. Set aside 1/3 portion. Slice remaining into 1/4” cubes.
2. In another pan, heat oil and sauté onions and garlic. Add sliced tocino and mix well. Make a well in the center and add eggs. Cook eggs scrambled.
3. Add mixed vegetables and cook for 1 to 2 minutes. Add rice then season with salt, soy sauce, sugar and white pepper. Add chopped green onions. Mix well. Top with cooked tocino before serving.
