WILD MUSHROOM TOMATO PASTA


Ingredients:

1/2 cup chopped PUREFOODS CLASSIC HONEYCURED BACON
1/4 cup chopped onions
2 tbsp chopped garlic
1 (400 g) can sliced mushrooms, drained
3/4 cup shiitake mushrooms, hydrated then sliced
1/2 cup cubed PUREFOODS COOKED HAM
2 (425 g each) cans stewed tomatoes, pureed
400 grams spaghetti, cooked according to package directions
1/4 cup grated Parmesan cheese

Procedure:

  1. In a pan, sauté bacon until almost brown. Set aside.
  2. In the same pan, sauté onions and garlic. Add mushrooms. Sauté for 3 minutes then add ham and bacon. Add tomatoes.
  3. Simmer for 15-20 minutes over low heat. Toss pasta with the sauce and top with Parmesan cheese.
Makes 8 to 10 servings.
