TURKEY PUTTANESCA


Ingredients:

2 tbsp olive oil
1 cup chopped white onions
1 tbsp minced garlic
1 cup cubed red and green bell peppers
6 pc PUREFOODS SMOKED TURKEY FRANKS, sliced
2 cups crushed tomatoes
1 cup sliced black olives
1 cup thinly sliced fresh basil
1 kg cooked angel hair pasta
1 cup grated Parmesan cheese
iodized fine salt

Procedure:

  1. In a pan, heat olive oil and sauté onions and garlic. Add bell peppers and cook until tender.
  2. Add in franks and crushed tomatoes. Bring sauce to a boil then lower heat to simmer and add olives and basil. Season the sauce with salt and pepper.
  3. Add pasta and toss well. Sprinkle parmesan cheese on top before serving.
Makes 4 servings.
