TONKOTSU RAMEN


Ingredients:

water
MONTEREY PORK FAT
vegetable trimmings
light soy sauce
MAGNOLIA FRESH MILK
carrots, julienned and blanched
cooked tofu, slice in square
shrimp, peeled and grilled
togarashi

Procedure:

  1. In a medium size sauce pot with hot water, put pork fat, vegetable trimmings, soy sauce, and milk.
  2. Simmer for 4-5 hours on medium low heat.
  3. After 6-8 hours, strain liquid and put back in pot and continue to simmer. Discard strained solids.
  4. In a soup bowl, put 80 g of ramen, 30 g of tofu, 2-3 pc of shrimp and togarashi and pour some hot broth. Serve.
