Tonkotsu Ramen


  1. In a medium size sauce pot with hot water, put pork fat, vegetable trimmings, soy sauce, and milk. Simmer for 4-5 hours on medium low heat.
  2. After 6-8 hours, strain liquid and put back in pot and continue to simmer. Discard strained solids.
  3. In each soup bowl, put 80 g of ramen noodles, 30 g of tofu, 2-3 pc of shrimp and togarashi and pour some hot broth. Serve.

Makes 4-6 servings.
