TOMATO SALAD


Ingredients:

9 pc salad tomatoes, 2-3/4" in diameter
4 pc celery stalks, chopped
cottage cheese, drained
4 pc PUREFOODS LEAN AND MEAN BACON, fried and chopped
1 tsp finely chopped parsley
salt & pepper to taste

Procedure:

  1. Slice top off tomatoes and scoop out the flesh, leaving only the shell. Set aside.
  2. In a bowl, combine celery, cottage cheese and season lightly.
  3. Stuff in tomato shells. Top tomato cups with bacon and parsley.
  4. Chill until ready to serve.
Makes 9 servings.
