TILAPIA FILLETS WITH RED BELL PEPPER SAUCE AND HERBED BUTTER


Ingredients:

Roasted bell pepper sauce:

4 (200 g) pc red and green bell peppers, roasted and finely chopped
1 tsp paprika
1 clove garlic, minced
1 cup corn oil
1/8 tsp pepper

Herbed Butter:

1 tsp dried rosemary
1/2 tsp dried thyme
1/2 cup MAGNOLIA GOLD BUTTER SALTED, softened
1 pc calamansi, juiced
1/2 (4 pc) kg tilapia fillets
1/2 tsp iodized fine salt
1/4 tsp pepper
1/4 cup cooking oil

Procedure:

  1. Combine all ingredients for herbed butter and blend well.
  2. Combine all ingredients for bell pepper sauce. Blenderize or process until viscous. Set aside.
  3. Season tilapia fillets with salt and pepper.
  4. Heat oil and pan-grill fillets until cooked through.
  5. Top with herbed butter and bell pepper sauce.
