STIR-FRIED MAGNOLIA CHICKEN W/ MUSHROOM AND LEEKS


Ingredients:

1 kg Magnolia Chicken, leg and thigh fillets
2 tbsp ginger juice
2 tbsp cooking oil
2 tbsp ginger, sliced
1 tbsp garlic
1 pc onion, sliced
2 tbsp rice wine
1/2 cup shiitake or black mushrooms
1/2 cup wood ear mushrooms or tengang daga
2 cup leeks
1 tbsp chili garlic paste
1/2 tbsp soy sauce
1 tbsp Hoisin sauce
1 tbsp AA powder diluted in 2 tbsps. water
pinch salt

Procedure:

  1. Cut Magnolia chicken leg and thigh fillet into bite-size pieces. Marinate in ginger juice, saltand pepper for a few minutes. Set aside.
  2. Heat oil  in wok. Saute ginger slices, garlic and Magnolia chicken pieces for 5 minutes.
  3. Add rice wine, mushrooms and leeks. And chili-garlic paste, hoisin sauce, soy sauce and a little mushroom water.
  4. Thicken with AA slurry.
