SPICED CHICKEN TOMATO PENNE


Ingredients:

1/2 kg penne pasta, cooked according to package directions
1/2 kg MAGNOLIA CHICKEN STATION BREAST FILLETS, cut into 1" pieces
1 tbsp olive oil
4 cloves garlic, minced
2 (400 g each) cans crushed tomatoes
1/2 cup white wine
iodized fine salt and pepper to taste
2 tbsp Parmesan cheese

RUB:

1/4 tsp ground fennel seed
1/2 tsp dried basil
1/4 tsp iodized fine salt
1/8 tsp pepper

Procedure:

  1. Combine first rub ingredients and rub onto chicken.
  2. Heat oil in a medium saucepan and cook chicken until slightly brown. Remove from heat then set aside.
  3. In the same pan, sauté garlic until soft. Add tomatoes and wine, bring to a boil then lower heat to simmer for 15 minutes. Season with salt and pepper. Put back cooked chicken into sauce and simmer again for 5 more minutes. Toss cooked pasta into sauce. Sprinkle cheese over pasta then serve.
Makes 6 to 8 servings.
