Ingredients:
7 (28 cups) | L | water |
400 | grams | whole MONTEREY BEEF BRISKET |
350 | grams | MONTEREY BEEF BONES |
1/4 | kg | fish bones |
1 (4 cups) | L | light soy sauce |
3-1/2 | cups | ramen noodles, blanched |
4 | pc | MAGNOLIA BROWN EGGS, boiled then sliced |
2 | tbsp | five spice powder |
1/2 | cup | chili garlic sauce |
200 | g | vegetable trimmings |
1 | cup | bamboo shoots, blanched |
1-1/4 | cups | fish cakes |
1 | cup | bean sprouts |
sliced green onions for garnish |
Procedure:
1. In a medium saucepot, heat water and add the next 7 ingredients. Bring to a boil and simmer covered for 6 hours over low heat. Set aside beef and slice when cool. Strain broth and discard strained solids. 2. In serving bowls, arrange ramen noodles, bamboo shoots, fish cakes, sliced beef and bean sprouts. Pour hot broth and garnish with green onions.
