SEAFOOD PASTA


Ingredients:

1/2 cup cooked clams, cooked in water (reserve 1 cup broth)
1/3 cup MAGNOLIA GOLD BUTTER
1/2 cup chopped onions
1 tbsp minced garlic
1/2 kg medium shrimps, peeled but leave tails intact, deveined
1/2 kg medium squid, ink sac removed then sliced
1 (250 mL) pack MAGNOLIA ALL-PURPOSE CREAM
2 tsp iodized fine salt
1/4 tsp pepper
1/4 tsp thyme leaves
1/4 tsp chopped parsley
1 tbsp nutmeg
1/4 tsp spaghetti or fettuccine noodles, cooked according to package directions
450 g Parmesan cheese for topping

Procedure:

  1. Remove meat from clams and set aside.
  2. Heat butter in pan. Sauté onions and garlic until tender. Add shrimps and squid and cook for about 2 minutes until shrimps turn orange. Remove and set aside.
  3. In the same pan, add cream and clam broth. Simmer over low heat and add seasonings and herbs. Simmer until reduced and slightly thick. Add clams, squid-shrimps mixture and cook for about 3 minutes.
  4. Toss cooked noodles into sauce and serve with Parmesan cheese.

Makes 6-8 servings.
