SEAFOOD BROCHETTES


Ingredients:

1 (500 g) pack PUREFOODS CLASSIC HONEYCURED BACON
1/2 kg medium size shrimps, peeled but tails kept intact
1/2 kg mussels, steamed and shells removed
1/2 kg scallops, shells removed
1 pc red bell pepper, sliced into strips
1 pc green bell pepper, sliced into strips
1/2 cup olive oil

LEMON BUTTER SAUCE:

1 cup MAGNOLIA GOLD BUTTER SALTED
1/4 cup lemon juice
1 tbsp chopped parsley

Procedure:

  1. Preheat oven to 350°F.
  2. Wrap bacon slices around the shrimps.
  3.  For the mussels and scallops, place a strip of bell pepper before wrapping with bacon. Place on an aluminum tray and drizzle with olive oil. Sprinkle paprika.
  4. Bake for 8 - 10 minutes until bacon is cooked. Serve warm with lemon butter sauce.
  5. For the lemon butter sauce, in a pan over medium heat, melt butter and add lemon juice. Sprinkle parsley.

Makes 8-10 servings.
