SAVORY CORN BREAD


Ingredients:

3/4 cup PUREFOODS CLASSIC HONEYCURED BACON, chopped
1/4 cup MAGNOLIA GOLD BUTTER UNSALTED
1/4 cup diced red bell pepper
1-1/4 cup MAGNOLIA ALL PURPOSE FLOUR
1-1/2 cup polenta
1/4 cup sugar
3/4 tsp iodized fine salt
1/2 tsp baking soda
1/2 cup MAGNOLIA FULL CREAM MILK
1/2 cup MAGNOLIA ALL-PURPOSE CREAM
3 pc MAGNOLIA BROWN EGGS LARGE
1 cup chopped green onions
1 (400 g) can cream style corn

Procedure:

  1. Preheat oven to 400°F. Grease a 9" x 9" x 2" baking pan. Set aside.
  2. Pan fry bacon until crispy. Drain bacon. Set aside cooked bacon and reserve 6 tbsp of bacon fat. In a skillet, melt butter and saute'' bell pepper. Cool.
  3. Mix flour, polenta, sugar, baking powder, salt and baking soda. Set aside.
  4. In another mixing bowl, whisk milk, cream, eggs, green onions, cream style corn, bacon and bacon fat.
  5. Whisk liquid ingredient mixture into the dry ingredient mixture. Mix until well blended. Pour into prepared baking pan. Bake for 30 - 40 minutes.
