SALTED EGG SPARERIBS


Ingredients:

1 kg MONTEREY PORK SPARERIBS
1 tsp iodized fine salt
1/4 tsp pepper
2 pc MAGNOLIA BROWN EGGS
1 cup MAGNOLIA ALL PURPOSE FLOUR
3 tbsp cooking oil
3 tbsp MAGNOLIA GOLD BUTTER
1/2 tbsp grated ginger
4 pc salted egg yolks
1/2 cup MAGNOLIA FRESH MILK
2 tbsp sugar
1 pc sili labuyo
1 (30 g) bundle green onion

Procedure:

  1. Pat spareribs dry and season with salt and pepper. Dip in eggs then dredge in flour, shaking off excess. Fry in heated oil. Drain on paper towels. Set aside.
  2. In a pan, melt butter then add ginger and salted egg yolks. Cook for 2 minutes. Add milk, sugar and sili. Cook for another 3 minutes, stirring occasionally. Add half of green onions.
  3. Coat spareribs with salted egg butter. Garnish with remaining green onions.
Makes 8-10 servings.
