SALAD WITH QUESO DE BOLA CRISPS


Ingredients:

200 grams assorted salad greens
300 grams green grapes
1 cup store bought balsamic vinaigrette
300 grams caramelized walnuts with chili
1 (300) pc MAGNOLIA QUESO DE BOLA, grated

CARAMELIZED WALNUTS (GOOD FOR 1 KG):

1 kg walnuts
1 cup sugar
1 tsp chili flakes
1 tsp iodized fine salt
1 pc MAGNOLIA BROWN EGG, use egg white only and beaten

Procedure:

  1. Toss salad greens and grapes with balsamic vinaigrette.
  2. Place in a serving platter then top with caramelized walnuts and queso de bola crisps.

QUESO DE BOLA CRISPS:

  1. Form grated cheese into small disc-like shapes and place in a tray lined with baking paper.
  2. Bake in a 325°F oven for 10 to 15 minutes or until cheese has melted and turns golden brown. Set aside and let cool.

CARAMELIZED WALNUTS:

  1. Combine walnuts, sugar, chili flakes and salt. Mix well. Drizzle egg white into mixture and toss until well coated.
  2. Bake at 350°F for 10 minutes. Remove from oven and toss to break.
  3. Put back into the oven and bake for another 10 minutes or until crisp and golden brown.

Makes 3 to 4 servings.
