SALAD ST. NICK


Ingredients:

3 cloves garlic, crushed and mashed
3 pc MAGNOLIA BROWN EGGS, use egg yolks only
1/4 tsp iodized fine salt
1/8 tsp pepper
1/2 tsp mustard
1/4 cup olive oil
1/4 cup MAGNOLIA GOLD BUTTER UNSALTED , clarified*
2 heads iceberg lettuce, cut into serving pieces
1/2 cup grated MAGNOLIA QUESO DE BOLA
2 tbsp chopped and fried PUREFOODS CLASSIC BACON HONEYCURED
1/4 cup croutons

Procedure:

  1. In a bowl, combine garlic, egg yolks, salt, pepper and mustard.
  2. Combine olive oil and clarified (melted then milk solids removed) butter and pour in streaks over the mixture gradually. Stir continuously until thick.
  3. Add lettuce and grated cheese. Toss and sprinkle bacon and croutons.

Makes 4-5 servings.
