ROASTED JUMBO CHICKEN IN CITRUS-PEPPERCORN RUB



Ingredients:

1 tsp cardamom seeds
2 tbsp mixed peppercorns (pink, black and white)
3 pc bay leaves
2 tbsp iodized rock salt
2 tbsp brown sugar
2 tbsp lemon zest
2 tbsp orange zest
1 whole MAGNOLIA JUMBO CHICKEN

Procedure:

  1. Preheat oven to 400°F.
  2.  Roast cardamom seeds, peppercorns and bay leaves in a dry pan. Crush roasted spices. Transfer to a bowl then add rock salt, brown sugar, lemon and orange zest. Mix well.
  3. Season chicken with spice mix then massage to infuse flavor. Tuck legs and wings. Transfer to baking tray. Bake for 1-1/2 hours to 2 hours or until fully cooked. Garnish then serve.

Makes 6 to 8 servings.
