ROAST JUMBO CHICKEN WITH ADOBO PORK AND CHICKEN LIVER STUFFING


Ingredients:

1 whole MAGNOLIA JUMBO CHICKEN
2 tbsp rock salt
cracked black pepper
.5 cup cooking oil
.5 cup onions, chopped
2 tbsp garlic, chopped
1 cup MAGNOLIA CHICKEN LIVERS, roughly chopped
1 cup MONTEREY GROUND PORK
1.5 cup rice, uncooked

Procedure:

  1. Preheat oven to 375F.
  2. Rub chicken with rock salt and pepper and set in a roasting pan.
  3. In a deep pan, heat oil and sauté onions until slightly translucent.
  4. Add garlic and continue sautéing for another 2-3 minutes.
  5. Add chicken livers and ground pork and cook until color changes.
  6. Add rice, mix well, followed by the rest of the ingredients.
  7. Cover pan and cook until rice is done and meats are cooked through.
  8. To assemble, allow rice mixture to cool.
  9. Stuff this into chicken and allow to roast for 1-1 ½ hours.
