RAISIN BREAD


Ingredients:

6-3/4 cups + 1 tbsp bread flour
1/2 cup brown sugar, packed
1/2 tbsp iodized fine salt
1-1/2 tbsp EMPEROR’S BEST INSTANT YEAST
2-1/2 cups lukewarm water
1/2 cup molasses
1/4 cup MAGNOLIA FRESH MILK
2 pc MAGNOLIA BROWN EGGS, use 1 whole egg and 1 beaten for eggwash
1/2 cup STAR MARGARINE CLASSIC plus extra for brushing pans
4 cups raisins

Procedure:

  1. Brush 3 loaf pans with margarine. Set aside.
  2. In a bowl, mix bread flour, brown sugar and salt. Set aside.
  3. In another bowl, add yeast to lukewarm water, then add molasses and mix. Add milk and one egg. Mix well.
  4. Place flour on a clean surface and make a well in the center. Pour yeast mixture, while mixing, into flour mixture. Mix until dough is formed.
  5. Add margarine and half of raisins. Continue kneading until dough is smooth and elastic. Add remaining raisins and knead for another 2 minutes. Rest dough covered for 15 minutes.
  6. Cut into 3 then form into baston. Put in prepared loaf pans. Proof for 2-1/2 hours until double in size. Preheat oven to 375F. Brush with egg wash and bake for 25 to 30 minutes.

Makes 3 loaves.
