PUREFOODS PRITONG PINOY TOCINO WITH PINEAPPLES


Ingredients:

260 g PUREFOODS PRITONG PINOY TOCINO, sliced into four
1 tsp cooking oil
2 tbsp butter
1 clove garlic, minced
1 slice small onion
.25 kg shrimps, peeled
1.5 cup coconut water
1 whole young coconut meat, cut into squares
.5 cup pineapple chunks
1 small green bell pepper, cubed
1 small red bell pepper, cubed
1 tbsp cornstarch, dispersed in
2 tbsp water
salt and pepper to taste

Procedure:

  1. Stir-fry tocino for 1 minute and set aside.
  2. Melt butter and saute garlic and onions. Add the shrimps. Stir in the tocino. Pour the coconut water and boil for 2-3 minutes. Add the coconut meat, pineapple chunks and bell pepper.
  3. Thicken the mixture with cornstarch. Season with salt and pepper and simmer until sauce thickens.
