Premium Ensaymada


  1. Blend together flour, yeast and sugar in a bowl. Add liquid ingredients and mix to make a smooth mixture. Cover and let stand for 1 hour until bubbly and has doubled in volume.
  2. Put sponge in a bowl. Beat in eggyolks, sugar and melted butter. At low speed, add flour and salt.
  3. Knead until mixture is smooth and no longer sticky. When kneading by hand, cover hands with a little oil to prevent mixture from being too sticky. Cover and let rest for 20 minutes.
  4. Meanwhile, brush ensaymada molds generously with Star Margarine.
  5. Scale and round dough into 60 gram pieces. Flatten out and brush with butter. Roll like a jelly roll and coil to form ensaymada. Put in molds and let rise for 2 hours.
  6. Bake at 350 F for about 9-10 minutes. Cool completely.
  7. Brush top with softened Magnolia Gold Butter. Sprinkle grated cheese (queso de bola and parmesan cheese) and sugar on top.
