PARMESAN-GARLIC CHICKEN WITH POTATO-EGG SALAD


Ingredients:

3 tbsp garlic powder
1/2 cup grated Parmesan cheese
1 (500 g) pack MAGNOLIA CHICKEN TIMPLADOS FRIED CHICKEN, cooked according to package directions

Potato Egg Salad

1-1/2 cups MAGNOLIA REAL MAYONNAISE
1 tbsp prepared mustard
1/2 tsp iodized fine salt
1/8 tsp white pepper
1 (30 g) pc small onion, finely chopped
1 (30 g) stalk celery, chopped
1/4 cup sweet pickle relish
3/4 kg potatoes, boiled, peeled and cut into chunks
5 pc MAGNOLIA BROWN EGGS, boiled, peeled and cut into cubes

  1. In a bowl, combine mayonnaise, mustard, salt, pepper, onion, celery and pickle relish. Mix well then add potatoes and eggs. Chill until ready to serve.
  2. In a bowl, combine garlic powder and Parmesan cheese. Toss fried chicken pieces until well coated.
  3. Serve chicken with potato-egg salad.

Makes 5 servings. (Yield: 5 pc chicken & 5 cups salad/1 pc chicken & 1 cup salad per serving) Tip: Tone down onion flavour by soaking onion in warm water for 10 minutes then drain.
