OATMEAL BREAD PUDDING


Ingredients:

12 pc day old sliced bread, edges trimmed and cubed
1/2 cup MAGNOLIA FRESH MILK
2 pc MAGNOLIA BROWN EGGS, beaten
1/4 cup raisins
1/4 cup quick cooking oatmeal
150 g fruit cocktail in syrup, drained (reserve syrup)
1/4 cup MAGNOLIA GOLD BUTTER SALTED, melted

Procedure:

  1. Preheat oven to 350°F.
  2. Combine bread, fresh milk, beaten eggs, raisins, 3 tbsp of oatmeal, fruit cocktail, syrup and melted butter in a bowl and mix well.
  3. Place in 4 separate oven-proof ramekins and cover each with aluminium foil.
  4. Bake for 30 minutes in a bain marie*. Remove foil in the last 5 minutes of baking and set oven to broil. Allow the top to brown.
  5. When done, remove from oven and cool for about 20 minutes. Top with remaining oatmeal. Pudding may be served warm or chilled.

*Bain marie refers to water bath. Place ramekins in a deep baking dish and add hot water until half level of ramekin.

Makes 4 servings.
