MEXICAN BEAN RICE


Ingredients:

1 tbsp minced garlic
1/4 cup STAR MARGARINE
1/3 cup uncooked rice
0.66 cup MONTEREY GROUND BEEF
2 tbsp tomato sauce
1 tbsp tomato paste
3 1/2 cups water
1/3 tsp ground cumin
1/2 tsp chili pepper
1 tsp salt
1 tsp ground black pepper
1 cup cooked red kidney beans

Procedure:

  1. Sauté garlic in Star Margarine.
  2. Add uncooked rice and ground beef. Cook until beef turns brown in color.
  3. Add tomato sauce and paste. Stir-fry for about 2 minutes.
  4. Add water. Bring mixture to a boil.
  5. Cook rice over high heat for about 10 minutes.
  6. Lower heat to medium-low. Cook until all the rice grains are tender.
  7. Season with cumin, chili pepper, salt and ground pepper.
  8. Add cooked kidney beans. Serve warm.
Makes 6 servings.
