- Fry eggplant slices until cooked and set aside.
- Saute lumpia mix until meat turns brown.
- Add 1 to 2 tsp of fajita seasoning.
- Add tomato sauce.
- Season with sugar.
- Simmer for 2-3 minutes. Set aside.
- Begin with the layer of eggplants in a pan or pyrex.
- Top with meaty sauce and grated cheese.
- Heating it in oven or microwave oven to further the melt the cheese is a better option.
Makes 4 servings.
