MEATY EGGPLANT PARMIGIANA


Ingredients:

6 pc eggplant, sliced lengthwise
1/4 kg MONTEREY LUMPIA MIX
1 pouch tomato sauce
taco or fajita seasoning
MAGNOLIA QUICKMELT CHEESE, grated

Procedure:

  1. Fry eggplant slices until cooked and set aside.
  2. Saute lumpia mix until meat turns brown.
  3. Add 1 to 2 tsp of fajita seasoning.
  4. Add tomato sauce.
  5. Season with sugar.
  6. Simmer for 2-3 minutes. Set aside.
Preparation:
  1. Begin with the layer of eggplants in a pan or pyrex.
  2. Top with meaty sauce and grated cheese.
  3. Heating it in oven or microwave oven to further the melt the cheese is a better option.
Makes 4 servings.
