LEMON SQUARES


Ingredients:

CRUST:

1 (225 g) pack BAKER'S BEST MARGARINE
1/2 cup + 2 tbsp powdered sugar
2 cups MAGNOLIA ALL PURPOSE FLOUR

FILLING:

4 pc MAGNOLIA BROWN EGGS
1-1/2 cups sugar
6 (1-1/2 pc) tbsp lemon juice
1/4 cup MAGNOLIA ALL PURPOSE FLOUR
1 tsp BAKE BEST BAKING POWDER
1 tsp iodized fine salt

Procedure:

  1. Preheat oven to 350°F. Line an 8"x10" baking pan with aluminum foil. Grease prepared pan. Set aside.
  2. Cream margarine until light in color. Add 1/2 cup powdered sugar and flour. Mix well.
  3. Transfer to prepared pan and press firmly with the back of a spoon. Bake for 20 minutes. Set aside.
  4. Beat eggs and sugar until thick. Gradually add lemon juice. Fold in flour, baking powder and salt. Pour over baked crust. Bake again for another  20 minutes. Set aside.
  5. Lower oven temperature to 325°F and bake for another 10 minutes. Sift remaining powdered sugar on top.

Makes 20 pieces.
