Leftover Chicken Adobo With Garlic Rice


  1. In a large saucepan combine the ingredients for the adobo. Let stand for 15 to 30 minutes. Pour in 1/2 cup of water. Place over medium heat and allow to boil without stirring. Lower the flames and allow to simmer until the chicken is done. Add more water if necessary.
  2. To prepare the rice, heat the butter in a large wok. Add the garlic and saute until the garlic becomes fragrant. Crumble the chicken cube and add to the mixture. Add rice and continue to saute until blended. Season with black pepper to taste. Pour in the adobo sauce and mix well.
  3. Spoon an adequate amount of rice in a container. Top with a piece of chicken adobo. Garnish with fried garlic, halved quail eggs and spring onions or coriander.
