LECHON ROLL


Ingredients:

2 kg MONTEREY PORK SHOULDER
1 cup cooking oil, for brushing
1 cup soda, lemon lime flavor for brushing

RUB:

1 (60 g) pc garlic, crushed
100 g shallots, sliced
1 (60 g) bunch tanglad or lemongrass, tied
1 (100 g) bunch green onions, sliced
2-1/2 tbsp iodized rock salt
20 g vetsin
1 (10 g) pack bay leaf and black peppercorns
4 pc star anise
1 L soda, lemon lime flavor

Procedure:

  1. Preheat oven to 350°F.
  2. In a bowl, combine rub ingredients and season pork shoulder with mixture. Strain and rub remaining seasoning on the skin. Roll pork, truss and place in a roasting rack.
  3. Bake in oven for 20 minutes. Brush skin with a mixture of oil and lemon lime soda.
  4. Cook the pork again for another 3 hours or until skin is brown and crisp.
Makes 15-20 servings.
