Lechon Roll

Procedure:

  1. Preheat oven to 350°F.
  2. In a bowl, combine rub ingredients and season pork shoulder with mixture. Strain and rub remaining seasoning on the skin. Roll pork, truss and place in a roasting rack.
  3. Bake in oven for 20 minutes. Brush skin with a mixture of oil and lemon lime soda.
  4. Cook the pork again for another 3 hours or until skin is brown and crisp.

Makes 15-20 servings.
