JOLLY BUNS


Ingredients:

500 g MAGNOLIA ALL PURPOSE FLOUR
500 g PRINCESS CAKE FLOUR
450 g water
160 g sugar
100 g MAGNOLIA BROWN EGG, use egg yolk only
50 g glucose
40 g MAGNOLIA GOLD BUTTER UNSALTED
40 g shortening
30 g buttermilk powder
10 g salt
10 g BAKE BEST INSTANT YEAST
4 g BAKE BEST BREAD IMPROVER

TOPPING:

g PUREFOODS SWEET HAM
g cheese
g fruit preserves

Procedure:

  1. Combine Baron All Purpose Flour, Princess Cake Flour, Bake Best Bread Improver, Bake Best Instant Yeast, butter milk powder.
  2. Dissolve glucose and sugar into the water with egg yolk.
  3. Combine flour and liquid mixture in a mixing bowl. Mix for 1 minute at low speed.
  4. Add Magnolia Gold Butter and shortening and continue mixing until fully developed.
  5. Divide into 50-gram pieces and form.
  6. Top with prepared topping.
    • For fruit preserve: apply after baking.
  7. Proof for about 2½ - 3hours or until double in size (85% relative humidity is ideal).
  8. Bake at 180°C for about 45 minutes or until done.
