JAMAICAN JERK PORK BBQ


Ingredients:

1 kg MONTEREY PORK TENDERLOIN, sliced into medallions star garlic margarine for brushing

RUB:

2 tsp thyme
1 tsp allspice
1 tsp brown sugar
1/2 tsp salt
1/2 tsp cracked black pepper
1/2 tsp cayenne
1/4 tsp sage
4 clove garlic, minced

Procedure:

  1. Combine rub ingredients in a bowl. Mix well and add sliced Monterey Pork tenderloin. Mix well and keep in the refrigerator for at least 2 hours.
  2. Pre-heat grill or grill pan. Brush surface with Star Garlic Margarine. Add pork medallions and cook thoroughly over moderate heat. If too dry, brush with Star margarine.
Makes 6 to 8 servings. Tip/s: *May be substituted with Monterey sliced Pork Belly, Monterey Porkchops or Monterey Pork Steaks.
