GRILLED LAMB CHOP IN ADOBO MARINADE


Ingredients:

1 (6 pc) kg MONTEREY LAMB CHOPS, 3/4" thick
2 tbsp cooking oil
1/8 tsp iodized fine salt
1/4 tsp pepper

Marinade

1/2 tbsp dry red wine
2 tbsp crushed garlic
1/2 cup cane vinegar
4 tsp soy sauce
1 tsp pepper
2 tsp iodized fine salt
1/2 cup water

Procedure:

  1. Combine marinade ingredients in a bowl except oil. Add lamb chops and mix well. Refrigerate overnight. Drain lamb chops but reserve marinade. Set aside.
  2. In a saucepan, add oil to marinade then boil until reduced. Season with salt and pepper. Set aside.
  3. Grill chops for 4 minutes per side. Serve chops with sauce on the side.

Makes 6 servings.
