GRILLED CHICKEN LEG WITH CUCUMBER PEPPER RELISH


Ingredients:

2 pc MAGNOLIA CHICKEN STATION LEG QUARTERS

MARINADE:

1/2 tsp ground cumin
1/8 tsp chili powder
2 tbsp olive oil
1/4 tsp iodized fine salt

CUCUMBER-PEPPER RELISH:

2 pc medium cucumber, peeled, seeded and chopped
1 tbsp chopped parsley
1/8 cups sliced red onions
1/2 cup chopped red bell pepper
1 pc lime, juiced
1/8 tsp iodized fine salt
1/4 tsp pepper

MANGO SAUCE:

1 pc ripe mango
3 tbsp sour cream

Procedure:

  1. Combine marinade ingredients in a bowl. Mix well and marinate chicken for at least 1 hour.
  2. Grill chicken until thoroughly cooked. Set aside.
  3. Combine relish ingredients in a bowl. Mix well. Chill.
  4. In a blender, combine sour cream and mangoes. Blend until smooth.
  5. Serve grilled chicken with relish and mango sauce on the side.

Makes 2 servings.
