GRILLED CHICKEN LEG QUARTERS WITH COFFEE SAUCE


Ingredients:

1 kg MAGNOLIA CHICKEN STATION LEG QUARTERS

COFFEE SAUCE:

1 cup boiling hot water
1 pc onion, quartered
1 tbsp soy sauce
1 tbsp cane vinegar
1/2 tbsp molasses
1 clove garlic, chopped
1/4 pc jalapeño pepper
1/2 cup maple syrup
1/4 cup honey
1 tsp iodized fine salt
1/2 tsp pepper
1/2 tbsp cooking oil
1/8 tbsp SAN MIG 100% PREMIUM 3-in-1 COFFEE
sugar to taste

Procedure:

  1. Combine all ingredients for coffee sauce in a saucepan. Simmer over low heat until reduced.
  2. Puree in a food processor and cool. Set aside sauce for marinating chicken.
  3. Marinate chicken in coffee sauce for 1 to 2 hour. Grill and serve with sauce on the side.
Makes 6-8 servings.
