GAENG KIEW WAN NEUA (Green Chicken Curry)


Ingredients:

1/2 cup green curry paste
3 tbsp cooking oil
1 (400 g) can coconut milk
1/2 cup cubed eggplant
5 pc Kaffir leaves, cut into strips
5 pc red and green spur chilies, sliced diagonally
2 tbsp fish sauce
1 tbsp sugar
1 cup sweet basil leaves
1/2 kg MAGNOLIA CHICKEN STATION BREAST FILLETS, cubed

Procedure:

  1. Sauté the curry paste in oil. Pour the coconut milk. Stir well then add the chicken.
  2. When boiling, add eggplant and Kaffir lime leaves. When the chicken and vegetables are cooked, add in the chili, fish sauce and sugar. Mix well.
  3. Add sweet basil leaves. Then remove from heat.
Makes 3 servings.
