EGGS, POTATOES AND CORNED BEEF


Ingredients:

2 tbsp cooking oil
1 (50 g) pc onion, chopped
3 tbsp chopped garlic
2 (50 g) pc tomatoes, chopped
1 (210 g) can PUREFOODS CORNED BEEF
2 (200 g) pc medium potatoes, boiled
3 pc MAGNOLIA BROWN EGGS, boiled and sliced in half

Procedure:

  1. Heat oil in a pan over medium low heat. Add onion, garlic, tomatoes and sauté for 2 minutes. Add corned beef and cook until dry. Set aside.
  2. Slice cooked potatoes lengthwise. Transfer to a serving plate then top with corned beef mixture. Just before serving, slice eggs in half and put on top of the dish.

Makes 6 servings.
