DOUBLE FRIED CHICKEN



Ingredients:

1 kg MAGNOLIA CHICKEN STATION WINGS

Batter

1-1/2 cups rice flour
3/4 cup cold water
cooking oil, for deep-frying

SAUCE:

1/2 cup hot chili soy paste
1/4 cup corn syrup
2 tbsp Shao Xing wine
1 tsp Gojuchang (hot pepper sauce)
2 tsp chili garlic sauce

Procedure:

  1. Combine 1/2 cup rice flour and cold water. Set aside.
  2. Preheat oil to approximately 350°F in a frying pan.
  3. Dip chicken wings in batter then dredge in rice flour. Deep-fry for 5 minutes. Drain on paper towels. Cool for 2 minutes then fry again for another 2 minutes over high heat.
  4. Combine all ingredients for sauce and mix well. Brush chicken with prepared sauces.

Makes 12 servings.
