CHOCO MERINGUE BITES


Ingredients:

1 (225 g) bar BAKER'S BEST MARGARINE
1/2 (100 g) cup sugar
3/4 (159.8 g) cup brown sugar
3 pc MAGNOLIA BROWN EGGS, separate egg yolks from whites
2-1/2 (300 g) cups MAGNOLIA ALL PURPOSE FLOUR
1 (14 g) tbsp BAKE BEST BAKING POWDER
1/4 (4.8 g) tsp baking soda
1/4 tsp iodized fine salt
3/4 (177.8 g) cup semi-sweet chocolate chips
3/4 (97.5 g) cup walnuts, coarsely chopped

Procedure:

  1. Preheat oven to 350°F. Line a 9" x 13" pan with aluminum foil. Grease and flour pan. Set aside.
  2. Cream margarine and 1/2 cup sugar and 1/2 cup brown sugar until light in color. Add egg yolks one at a time, beating well after each addition. Combine flour, baking powder and soda, and salt. Fold into egg yolk mixture. Transfer mixture to prepared pan and flatten with the back of the spoon. Bake for 15 minutes. Let cool.
  3. Combine chocolate chips and walnuts. Sprinkle over baked crust. Set aside.
  4. Beat egg whites until foamy. Add 1/4 cup brown sugar and continue to beat until stiff. Spread or pipe over crust.
  5. Bake for 20 minutes. Turn off heat and allow meringue to dry for about 40 minutes. Cut into bars. May be drizzled with melted chocolate if desired.

Makes 8-10 servings.
