CHICKEN POTATO SALAD


Ingredients:

4 pc potatoes, peeled, boiled and cubed
1 stalk celery, chopped
9 pc baguio beans, sliced and blanched
1/2 pc carrot, cubed and diced
1 (230 grams) can PUREFOODS CHICKEN VIENNA SAUSAGE, sliced then simmered in its own broth then drained

Dressing

1/2 cup low-fat mayonnaise
1/4 cup banana ketchup
2 tbsp honey
1 tsp vinegar
dash hot sauce

Procedure:

  1. Mix all dressing ingredients together. Set aside.
  2. In a salad bowl, toss potatoes, celery, baguio beans, carrot and vienna sausage together with half of the dressing.
  3. Arrange lettuce at the bottom of the serving bowl then arrange the mixed vegetable ingredients on top of the lettuce leaves. Drizzle the remaining dressing prior to serving.
Makes 2-3 servings.
