CHICKEN POTATO CAKES


Ingredients:

1 pc onion, grated
1 pc potato, grated
2 pc MAGNOLIA CHICKEN STATION BREAST FILLETS, sliced into thin strips
1/4 tsp iodized fine salt
1/4 tsp pepper
3 tbsp cooking oil
3 tbsp MAGNOLIA BUTTERCUP
1 cup breadcrumbs
2 tbsp chopped parsley
1/2 cup grated MAGNOLIA CHEDDAR CHEESE

Procedure:

  1. Mix together onion and potato and squeeze out as much of its juice as possible. Combine half of chicken with potato-onion mixture. Season with salt and pepper.
  2. Divide mixture into ten and shape into a 1/2” thick round patties. Pan-fry each patty in oil until golden brown in color. Drain excess oil on paper towels. Arrange on a plate.
  3. In a saucepan, melt margarine then stir in bread crumbs, remaining chicken, parsley and cheese. Mix thoroughly and cook for 2 minutes. Spoon bread crumb mixture on each patty and serve.
Makes 3-4 servings.
