CHICKEN HUNTER STYLE


Ingredients:

1 cup PUREFOODS LEAN N MEAN BACON, cut into 1" pieces
2 tbsp MAGNOLIA GOLD BUTTER
1 tbsp minced garlic
1 cup onions, sliced thinly
1 kilo MAGNOLIA CHICKEN, cut into parts
.5 tsp salt
pepper to taste
.6 cup white wine
1 cup chicken broth
1 tbsp tomato paste
.5 cup sliced mushrooms
.3 cup sliced green olives

Procedure:

  1. Saute bacon pieces until it turns slightly golden brown.
  2. Add butter.
  3. Saute minced garlic.
  4. Add sliced onions and cook until it turns translucent.
  5. Add chicken pieces and season with salt and pepper.
  6. Pan-fry chicken pieces until it turns golden brown. Turn chicken over and brown the other side.
  7. Add white wine. Simmer until wine is reduced in half.
  8. Add chicken broth and tomato paste.
  9. Bring mixture to boil. Skim off extra fat. Lower heat to simmering.
  10. Add mushroom and olives.
  11. Simmer for another 5 minutes. Serve warm.
Makes 8 servings.
