Chicken Elizabeth


  1. Pre-heat oven to 350°F.
  2. Place 1 chicken breast between 2 sheets of plastic wrap and pound to 1/4 ” thickness. Spread 1 tsp butter on one side of fillet. Season with salt and pepper. Top with 1 slice of cheese. Fold chicken over to enclose cheese. Tuck ends under and secure with toothpick. Dredge in flour, dip in beaten egg then roll in breadcrumbs. Transfer to a baking dish, seam side down. Repeat with remaining chicken.
  3. Melt 1/4 cup butter with garlic over low heat. Add stock or wine. Pour over chicken.
  4. Bake until golden brown (40-50 minutes). Garnish with parsley.
