CHICKEN ELIZABETH


Ingredients:

4 pc MAGNOLIA CHICKEN STATION BREAST FILLETS, skin removed
1/4 cup + 4 tsp MAGNOLIA GOLD BUTTER SALTED
1 tsp iodized fine salt
1/2 tsp pepper
4 slices MAGNOLIA QUICKMELT CHEESE
1/4 cup MAGNOLIA ALL PURPOSE FLOUR
1 pc MAGNOLIA BROWN EGG, slightly beaten
1 cup breadcrumbs
4 cloves garlic, minced
1/2 cup chicken stock or white wine
2 tbsp chopped parsley

Procedure:

  1. Preheat oven to 350°F.
  2. Place 1 chicken breast between 2 sheets of plastic wrap and pound to 1/4 inch thickness. Spread 1 tsp butter on one side of fillet. Season with salt and pepper. Top with 1 slice of cheese. Fold chicken over to enclose cheese. Tuck ends under and secure with toothpick. Dredge in flour, dip in beaten egg then roll in breadcrumbs. Transfer to a baking dish, seam side down. Repeat with remaining chicken.
  3. Melt 1/4 cup butter with garlic over low heat. Add stock or wine. Pour over chicken.
  4. Bake for 40 to 50 minutes until golden brown. Garnish with parsley.

Makes 4 servings.
