Chicken Bacon Loaf

Procedure:

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix all chicken loaf ingredients except bacon. Set aside for at least 30 minutes. Line loaf pan with bacon strips and transfer mixture into a pan and bake for one hour or until done.
  3. Mashed potato: Combine potatoes, butter, sugar, cream, cheese and salt. Mix well and set aside.
  4. Invert pan of cooked chicken loaf on a serving platter. Decorate sides with piped borders of mashed potatoes, mint, onion, bell peppers rings and green peas.

Makes 10 to 15 servings.
