CHICKEN AND SAUSAGE GUMBO


Ingredients:

1/2 cup cooking oil
1/2 cup MAGNOLIA ALL PURPOSE FLOUR
1 pc onion, finely chopped
3 cloves garlic, finely chopped
3 pc PUREFOODS PREMIUM GERMAN FRANKS, sliced diagonally
1/4 kg MAGNOLIA CHICKEN STATION BREAST FILLET cut into cubes
2 tbsp okra, trimmed and sliced
3 cups water
2 tbsp lemon or calamansi juice
2 tbsp fresh lemon or calamansi juice
1/4 tsp iodized fine salt to taste
1/4 tsp salt to taste
1/8 tsp pepper to taste
1/8 tsp cayenne pepper to taste

Procedure:

  1. In a large pan over medium heat, combine the oil and flour. Mix until bubbly then lower the heat. Continue mixing to avoid burning.
  2. When mixture has turned slight dark brown in color, add in the onion and garlic. Bring heat to medium then add franks and chicken. Cook until chicken changes in color.
  3. Add okra and water. Bring mixture to a boil. Cook until chicken is done and the sauce thicks. Turn off heat then add lemon juice and season with salt, pepper and cayenne pepper.
Makes 3 servings.
