CHICKEN AND ANCHOVY PASTA


Ingredients:

400 grams cooked penne pasta
1 tbsp chopped basil
1/4 cup grated Parmesan cheese

Sauce

1 tbsp minced garlic
1 pc medium onion, finely chopped
1/4 cup olive oil
200 grams MAGNOLIA CHICKEN STATION BREAST FILLET, cooked and cubed
4 pc anchovy fillets, chopped
1/4 cup sun dried tomatoes, plumped in warm water
4 pc green olives, cut into wedges
3 tbsp pistachios, roasted and cut into half
1 (250 mL) pack MAGNOLIA ALL-PURPOSE CREAM
2 tbsp ANTONOV VODKA
1/8 tsp cumin
1/8 tsp cinnamon
tsp nutmeg
1/4 tsp iodized fine salt
1/8 tsp pepper

Procedure:

  1. For the sauce, sauté garlic and onion in olive oil. Add chicken and anchovies. Add the rest of the ingredients and let simmer.
  2. Toss pasta and basil with the sauce. Garnish with Parmesan cheese.
Makes 3-4 servings.
