CHEWY DATE FINGERS


Ingredients:

Crust

1-1/2 cups oatmeal
3/4 cup MAGNOLIA ALL PURPOSE FLOUR
1 tsp cinnamon
3/4 tsp baking soda
1/4 tsp iodized fine salt
3/4 cup BAKER'S BEST MARGARINE
3/4 cup brown sugar
1 pc MAGNOLIA BROWN EGG
1/2 cup powdered sugar

Filling

2 cups chopped dates
1 tbsp lemon juice
1/4 tsp cinnamon

Procedure:

  1. Preheat oven to 350°F. Line an 8” square pan with aluminium foil.
  2. In a bowl, blend dry ingredients (first 5 ingredients). Set aside. In another bowl, cream margarine and brown sugar until fluffy. Add egg and beat well. Gradually add in dry ingredients and blend well until dough forms.
  3. Mix filling ingredients in a bowl. Set aside.
  4. Divide dough into two portions. Press 1/2 portion into the bottom of prepared pan. Spread filling evenly on top. Gently and evenly pat remaining half of dough onto layer of filling.
  5. Bake for 30 to 35 minutes. Cool. Dust with powdered sugar and cut into fingers.
Makes 32 pieces.
