CHEESY BELL PEPPER CUPS


Ingredients:

2 pc red bell peppers, halved and seeded
2 pc green bell peppers, halved and seeded
1/2 cup DARI CRÉME CLASSIC, melted
2 tbsp minced onion
1 tbsp minced garlic
1 pc potato, diced
1 pc medium carrot, diced
3 cups MONTEREY GROUND PORK
1 tsp liquid seasoning
1/8 tsp iodized fine salt
1/8 tsp pepper
1 cup grated MAGNOLIA QUICKMELT CHEESE

Procedure:

  1. Brush bell peppers with margarine and toast directly over stove top.
  2. Sauté onion, garlic, potato and carrot in remaining margarine until cooked. Add ground pork and sauté until cooked. Add liquid seasoning then further season with salt and pepper.
  3. To prepare bell pepper cups, fill each bell pepper half with pork mixture. Top with cheese.
  4. Toast cups until cheese melts. Serve hot.
Makes 8 servings.
