BOTTLED RAGU WITH PUREFOODS FIESTA HAM


Ingredients:

1/2 cup olive oil
1 pc white onion, finely chopped
1 pc carrot, finely chopped
375 grams PUREFOODS FIESTA HAM, minced
1/2 cup dry white wine
2 tbsp tomato paste
2 tbsp water
1/2 kg plum tomatoes, peeled, seeded and chopped
1/2 tsp iodized fine salt
1 tsp finely chopped Italian flat parsley
pepper to taste

Procedure:

  1. Warm olive oil in a large pan over medium-low heat. Sauté onion, garlic and carrot until tender.
  2. Stir in ham using and continue to sauté over medium-low heat. Do not allow ham to toughen.
  3. Pour in wine and allow to evaporate for about 2 minutes. Dissolve tomato paste in water and stir in. Simmer for 8 minutes or until mixture thickens.
  4. Add tomatoes and salt then simmer until sauce is thick and aromatic for about 40 minutes. Add parsley and pepper to taste and remove from heat. Pack into sterilized bottles* while hot.
  5. To serve: Reheat sauce and serve with cooked pasta and grated MAGNOLIA QUESO DE BOLA.
Makes 8 servings. *Sterilize bottles by washing with soap then heat in a 225°F preheated oven for 20 minutes.
