  1. In a bowl, combine pancake mix, beer and egg. Mix well until lumps are not present.
  2. Pat chicken dry, season with salt and pepper then dip in batter. Deep fry in hot oil until golden brown or fully cooked. Set aside. Serve with maple syrup.

Makes 12 servings.
